Deer Heart Step 1. cut top of heart and all white web like stuff off 2. Heat pan with butter 3. Cut deer heart into 1 inch thick slices 4. Salt and pepper deer heart slices 5. put onions and some garlic in pan 6. when onions are just starting to turn color and texture add deer heart in 7. deer heart will start turning gray on side when gray line gets to middle flip 8. pour 1/4 to 1/2 cup of red wine in pan over meat 9. let wine cook down into sauce and serve
